Potato Latkes for the win~

Tonight is the first night of Hanukkah. I hope that those of you who are celebrating are enjoying delicious Hanukkah fare.
My friend Jane was nice enough to give us an enormous amount of potatoes and 3 dozen eggs so it was time to make the latkes.  This is Jane's recipe. It is awesome.  Enjoy!!  And just a note. These are not healthy, they are not vegan, and they are not typical food that is ever served in our house.  But since it is a holiday, we are eating latkes tonight.

Jane's Latkes
4 potatoes
1 onion
1/2 tsp baking powder
3/4 tsp salt
1 egg
1/4 tsp pepper (optional)
1/2 cup flour
Clean, peel and grate the potatoes.  Soak them in cold water twice then squeeze out as much water as possible.  Grate the onions into the bowl with the clean, dry potatoes.  Add in the rest of the ingredients.  Fry in a pan of very hot oil.  Eat with applesauce and sour cream.
