Leftover Mashed Potatoes?

Do you ever find yourself with a bunch of leftover mashed potatoes? Sometimes the kids do not like to eat them very much the second day.  Mashed Potato Latkes to the rescue!  These came out so good and one of my kids said they tasted better than regular mashed potatoes! Give them a try next time you have some leftover taters.

Mashed Potato Latkes
2 cups mashed potatoes
1 egg
1/4 cup flour
salt
garlic powder
minced onion

Add all the ingredients into a large bowl and mix well.  Add the spices to taste.  Fry up some oil, get it nice and hot!  Fry these up like you would a regular potato latke.  Eat immediately with some sour cream and applesauce and ENJOY!
